Mjølnir (RIP) was a powerful weapon too. But not nearly as powerful as Stormbreaker. Notice how the handle is more practical for the size of the hammer’s head. It’s just more proportioned. Again, Mjølnir motions were intended to be one of downward strikes against the ground or through a person’s body to hit them hard. He sends Mjølnir flying and it rips through the bodies of his victims sure, but that’s because of the force that thing is coming at those guys. Thor can’t do that with Mjølnir unless he throws it. Unlike with Stormbreaker where he can cut a guy in half with a swing.
Stormbreaker is meant for an infinity war. This is a Titan-killing weapon. It’s handle being the length it is serves the purpose that it is intended for, and that is cutting through the skin of top-tier bad guys. Eitri says that this is the “strongest weapon” in Asgard history. It isn’t intended to move the way Mjølnir did (i.e., like the pounding of a hammer). Looking at the proportion of the axe head to the handle, if the handle was any shorter it wouldn’t be balanced. It would be top heavy and we all know that having a balanced weapon is crucial to the “swing” as Thor explains in AoU.
Also, I guess the downside to Stormbreaker being so massive is that Thor needs both hands to really get a good swing on it. In Infinity War (so spoilers ahead), Thor threw the Stormbreaker and it literally cut straight through a blast from the fully constructed Infinity Gauntlet. The Stormbreaker’s blunt power is greater than the Infinity Gauntlet’s!! Of course, the IG is more capable and powerful than the Stormbreaker, but the Stormbreaker’s blunt power rivals the IG. Oh, and by the way, the “blunt” power is basically the blunt blast that an infinity stone can produce, regardless of what aspect of the universe it controls. Like, Vision can shoot blasts from the mind stone. That is just a blunt blast. Now the blunt or raw power of the blast that Thanos beamed at the Stormbreaker was the blast of all the Infinity Stones combined and beamed at once.
